摘要
通过感官评定以及理化指标中酸价、过氧化值、黄曲霉毒素B1的测定来评价花生油品质。通过对6种样品的检测,结果测得3种品牌花生油全部合格,而散装花生油黄曲霉毒素B1易超标。为安全起见,消费者最好购买品牌花生油。
With commercial peanut oil as material, sensory evaluation, acid value, peroxide value, aflatoxin B1 as determination indexes, the quality of peanut oil are evaluated. The results show that three kinds of brand peanut oil all qualified in six samples, but aflatoxin B1 in bulk peanut oil is easily found to exceed the standard. For safety reasons, consumers are recommended to purchase brand peanut oil as far as possible.
