摘要
温度是影响酒醅发酵的重要因素,酒醅温度的变化是由环境温度(主要是地温)和窖池微生物生长代谢共同作用的结果[1]。利用基于物联网技术的窖池智能监测系统对浓香型白酒窖内不同空间位置的温度进行多排次跟踪监测,绘制变化曲线,并拟合出数学模型。结果表明,各排窖内温度变化曲线基本符合传统经验[2];使用MATLAB软件分析数据,采用高斯八阶函数曲线模型拟合原始温度数据的效果较好,与各排次以及层次的原始数据都非常接近。
Temperature is an important factor influencing the fermentation of fermented grains. The change of fermented grains temperature is determined by ambient temperature(mainly ground temperature) and microbial growth and metabolism in pits. Internet-of-things-based intelligent pits monitoring system had been applied for tracking and monitoring of the temperature at different spatial location in pits for multiple production rounds. Then the changing curves were drawn and the relative fitting mathematical models were obtained. The results showed that, temperature changing curves in pit in each production round were almost in line with traditional experience, and data analysis by MATLAB software proved Gaussian eight-order function curve model for the fitting of original temperature data was the best choice(very close to the original data in each production round/ at different spatial location).
