摘要
啤酒糟是啤酒生产的主要副产物,含有丰富的营养成分,具有较高的经济开发价值。论述啤酒糟在饲料、食用菌栽培料、休闲食品、复合氨基酸、纤维素酶、饮料、膳食纤维等方面的应用,以期为啤酒糟的深加工再利用提供参考。
Brewery mash is the main byproduct in beer production which has rich nutrition components, and high economic develop- ment value. In the article, it expounded the application of brewery mash in forage, edible mushroom cultivation, snack food, composite amino acid, cellulose enzyme, beverage and dietary fiber, in order to provide a reference for deep processing and reutilization of brew- cry mash.
