摘要 对影响马铃薯淀粉消化率的因素、马铃薯慢消化淀粉和抗性淀粉的制备和检测方法,以及在食品中的应用进行综述,并对马铃薯慢消化淀粉和抗性淀粉的前景进行了展望。 Factors affecting the digestibility of potato starch,preparation and determination methods,application in food industry resistant starch and slowly digestible starch for potatoes were reviewed and the prospect was forecasted.
