摘要
目的:了解云南省城乡居民膳食营养状况,为科学制定营养政策提出建议。方法:采用多阶段分层与人口成比例的整群随机抽样,2010—2012年间抽取云南省城市、农村6个地区的2岁以上常住人口入户开展3d 24h膳食回顾调查,并称重记录家庭3d油、盐、味精等调味品的消费量。结果:共调查1 072户,2 170人,农村居民占多数,为69.8%,低收入(<10 000元)居多,占67.2%。禽畜肉类、油脂类和食盐摄入过多,而蔬菜、水果、蛋类、鱼虾类、豆类及豆制品、奶及奶制品的摄入不足。奶及奶制品摄入量为12.3g,仅达到推荐摄入量的4.1%,农村居民奶类摄入量仅为5.1g。随收入升高,云南省城乡居民水果、畜禽肉类、奶及奶制品摄入量增加。结论:云南省城乡居民膳食结构不合理,建议加强营养监测,掌握居民膳食营养发展状况;加强营养知识宣传教育,提倡低油低盐饮食;开展基层营养指导,尤其是农村地区的膳食指导。
【Objective】To understand the dietary nutritional status among urban and rural residents in Yunnan province to provide suggestions for nutrition policy. 【Method】Using Multi-stage stratified and population proportionate cluster random sampling,residents aged over2 were selected in 6 counties in Yunnan province during 2010—2012 to carry out the 3d 24 h dietary recall survey,and the dosage of oil,salt,MSG and other spices were weighed to records 3 days' consumptions of family. 【Result】Totally 1 072 households and 2 170 people were surveyed. Rural residents took a larger proportion of 69. 8%,and the majority with low( 10 000 yuan) income accounted for67. 2%. People had too much livestock meat,fat and salt,but vegetables,fruits,eggs,fish,beans and bean products,milk and milk products were less than RNI. Dairy intake of milk per person was 12. 3g,amounted for only 4. 1% of the RNI. Especially,the rural residents only had 5. 1g milk each person per day. As income increased,the consumption of fruits,livestock and poultry meat,milk had increased.【Conclusion】Dietary structure was not reasonable among urban and rural residents in Yunnan province. Nutritional surveillance should be strengthened to understand the development status of residents' dietary nutrition. Nutrition knowledge education should be strengthened and low oil and low salt diet should be advocated. Basic nutritional guidance should be conducted,especially in rural areas.
