摘要 采用顶空-固相微萃取(HS-SPME)与气相色谱-质谱(GC-MS)联用的方法,对陶香型白酒的挥发性成分进行初步定性分析。在检出的98种化合物中,其中41种酯类化合物占组分种类总数的72.87%,是陶香型白酒香气的主要贡献成分。此外,12种醇类,2种醛类,10种酸类,7种酮类物质,1种硫化物,12种苯类,5种呋喃类,4种酚类,2种吡嗪类也都为陶香型白酒的复合香气作出了重要贡献。 The volatile constituents in Pottery-flavor liquor were qualification analysed by headspace solid phase microextraction(HS-SPME) coupled with gas chromatography-mass spectrometry(GC-MS). Ninety-eight volatile compounds were detected including 41 ester compounds(main flavoring contribution compounds of Pottery-flavor liquor and accounting for 72.87% of total compounds). Besides,12 alcohols,2 aldehydes,10 acids,7 ketones,1 sulfide compounds,12 benzenes,5 furans,4 phenols,2 pyrazines are also made important contributions to the composite aroma of Pottery-flavor liquor.
