摘要
为了进一步开展机械化善酿酒酿制的研究,在机械化大罐中进行加酒母和不同量的加饭醪液酿制善酿酒试验研究。试验结果表明:机械化酿制的善酿酒理化检测和口味品尝非常接近原工艺,而且不需要增加设备投资,在保证质量的前提下,能打破产能和季节的制约降低生产成本。
In order to study the further development of mechanization of shanniang rice wine brewing, in the machinery of the tank with yeast and different amounts of rice mash brewing shanniang rice wine test research. The test results show that the brewed mechanization of shanniang rice wine, physical and chemical detection and taste taste very close to the original process, and do not need to increase investment in equipment, under the premise of quality assurance, breaking capacity and seasonal constraints reduce the production cost.
