平顶山市食品微生物安全风险监测评价分析 被引量:2

Monitoring evaluation analysis of food microbiological risks of food safety in Pingdingshan city

摘要 目的了解平顶山市食品卫生状况,进行食品安全风险评估,为制定有效的监管措施提供科学依据。方法采集10类食品202份样品,按照《食品卫生微生物检验》提供的标准方法进行检验,并按国家卫生标准进行结果判定。结果 202份样品总体合格率为83.66%;10类食品中肉与肉制品合格率最高,为96.55%;合格率较低的食品类别分别为流动早餐、桶装饮用水、膨化食品,合格率分别为37.50%、45.00%、80.95%。致病菌合格率较低的食品类别分别为乳与乳制品、地方特色食品、婴幼儿食品,合格率分别为84.62%、91.67%、95.45%。结论平顶山市食品卫生状况总体良好,流动早餐和桶装饮用水存在安全隐患,应加强监督管理。 Objective To learn the hygiene status of food in market of Pingdingshan city,evaluate the food safety risk,so as to provide basis for making effective supervision measures. Methods 202 food samples of 10 categories on market were detected according to the methods in Microbiological examination of food hygiene,and the results were evaluated in accordance with the national standard. Results The average pass percent of the samples is 83. 66%. Among the 10 categories of food products,meat and meat products have the highest pass rate( 96. 55%). Flow breakfast,bottled drinking water and puffed food have the least pass rate( 37. 50%,45. 00% and 80. 95% respectively). Milk and milk products,local specialty food and infant food have the least pass rate of pathogens( 84. 62%,91. 67% and 95. 45% respectively). Conclusion The overall condition of the food on market in Pingdignshan is generally qualified. Flow breakfast and bottled drinking water have security risks to a certain extent,and the food hygiene regulation in future should be focused on these categories.
