摘要
通过改变酸乳中的保加利亚乳杆菌和嗜热链球菌生长环境,优化乳酸菌高效降胆固醇的最适条件,并用硫酸铁铵法测定胆固醇含量。研究结果表明,保加利亚乳杆菌和嗜热链球菌均在2%接种量,p H为6.7、37℃下,培养48 h后,降胆固醇效果最好,降解率分别达到4.12%和4.53%。
During this experiment, it was optimized the best condition of reducing cholesterol efficiently by altering the growth environment of Lactobacillus bulgaricus and Streptococcus thermophilus in yoghourt. What's more, it was utilize ammonium ferric sulfate to measure the cholesterol levels. The results shows that the cholesterol levels could be declined most efficiently when inoculation amount of Lactobacillus bulgaricus and Streptococcus thermophilus both are 2%, pH is 6.7, temperature is 37 % and they are cultivated for 48 h. The degradation rate approximates to 4.12% and 4.53% respectively.
