Analysis of the microbial surveillance results for food safety in Tianhe district in 2015

摘要 目的分析2015年天河区食品安全风险监测微生物结果,了解市售食品中食源性致病菌的污染情况,进行食品安全风险评估和预警,为制定有效的监管措施提供依据。方法每季度均匀采样,共采集了熟肉制品20份,培烤食品(蛋糕、面包)32份,中式快餐40份,共92份,根据《2015广州市食品安全风险监测工作手册》提供的方法进行菌落总数、大肠菌群、沙门菌、金黄色葡萄球菌、单核细胞增生李斯特菌、蜡样芽胞杆菌检测,并按国家标准进行结果判定。结果在监测的3类92份食品中,细菌总数超标率最高(52.17%),其次为大肠菌群(40.22%)、蜡样芽胞杆菌(5.43%),沙门菌、金黄色葡萄球菌、单核细胞增生李斯特菌未检出。结论天河区大部分市售食品安全风险低,但抽查的3类食品均存在不同程度的污染现象,存在一定的安全隐患,应加强监管。 Objective In this study,we analyzed result of year 2015 from food safety risk monitoring for microorganisms in Tianhedistrict,and formed comprehensive understanding of foodborne pathogenic bacteria contamination situation in commercial food. We conducted food safety risk assessment and warning system to provide a basis for the development of effective regulatory measures. Methods The samples were quarterly collected. 92 samples were collected in total,including 20 samples of cooked meat,32 bakery samples( cake and bread) and 40 samples of Chinese fast food. The methods were performed for detection of total plate count,Coliform bacteria,Salmonella,Staphylococcus aureus,Listeria monocytogenes and Bacillus cereus based on 2015 Guangzhou Food Safety Risk Monitoring Handbook. All results were affirmed according to national standard.Results Among 92 food samples in 3 types,the highest of exceeding standard rate is total plate count 52. 17%,which followed by 40. 22% in Coliform bacteria. Bacillus cereus came to 5. 43%. Salmonella,Staphylococcus aureus,Listeria monocytogenes detected negatively. Conclusion Food safety risk was found low in most of commercial food in Tianhe district,but contamination situation still exists in the spot check of three types of food. Therefore,contamination poses a certain of security threat and supervision is needed to be strengthened.
