摘要
以壶瓶枣等23个具有代表性的枣(Ziziphus jujuba Mill.)品种为试材,对其脆熟期(半红)果实中钾(K)、钙(Ca)、钠(Na)、镁(Mg)、铁(Fe)、锌(Zn)等6种矿质元素含量进行分析。结果表明,23个枣品种果实中各矿质元素含量大小顺序为K〉Ca〉(Mg,Na)〉Fe〉Zn;23个枣品种果实中矿质元素含量范围,K为9.796~18.741 mg/g,Ca为0.607~1.796 mg/g,Na为0.298~0.586 mg/g,Mg为0.370~0.534 mg/g,Fe为0.292~1.170μg/g,Zn为0.004 2~0.024 2μg/g;其中,6种矿质元素的变异幅度差异较大,变异系数在9.94%~43.59%,Mg含量变异最小,Zn含量变异最大。Shapiro-Wilk正态性检验结果表明,在23个枣品种果实中,K,Na,Mg,Fe含量符合正态分布,Ca和Zn含量不符合正态分布。
Taking 23 representative Chinese jujube varieties(for example ’Hupingzao’) as the test materials, the contents of6 mineral elements containing K, Ca, Na, Mg, Fe, Zn were analyzed in crisp mature period fruits. The results showed that comparison of 6 mineral elements contents was K〉Ca〉(Mg,Na)〉Fe〉Zn in 23 Chinese jujube varieties. The mineral elements contents in23 Chinese jujube varieties as follows: K was 9.796-18.741 mg/g, Ca was 0.607-1.796 mg/g, Na was 0.298-0.586 mg/g, Mg was0.370-0.534 mg/g, Fe was 0.292-1.170 μg/g, Zn was 0.004 2-0.024 2 μg/g. The variation range of the 6 mineral elements was different,the variation coefficient was 9.94%-43.59%, the variation of Mg contents was the smallest and Zn was the biggest. Shapiro-Wilk normality test results showed that K,Na,Mg,Fe contents were conformed to the normal distribution, and the contents of Ca, Zn were not conformed to the normal distribution.
