摘要
通过介绍"食品物性学"课程的主要特点和任务,分章讲述了前期教学过程中实践方法,并结合前人经验和自身总结,提出扩充教师知识体系、激发学生兴趣、理顺章节逻辑关系和灵活考核等观点,以期增强"食品物性学"课程教学效果,并提高教学质量。
This paper, the main feature and tasks of Physical Properties of Foods are introduced, the practice methods from previous teaching procedures are also represented by chapter divisions. The author provided four viewpoints, extending the scope of knowledge, stimulating students' interest, rationalizing the logical relationship of every chapter, and enrich assess- ment methods, in order to improving teaching efficiency and enhancing teaching quality.
