摘要
为研究不同浓度硒含量的乳酸菌对黄曲霉菌生长及产毒的抑制效果,测定了硒浓度分别为1 0、15、2 0、25μg / m L 的M R S 液体培养基中培养的乳酸菌对黄曲霉菌落生长抑制率、黄曲霉孢子生长抑制率以及黄曲霉产毒量抑制效果.结果显示硒浓度在1 0 -2 5 μg /m L,培养4 8 h 的富硒乳酸菌对于黄曲霉生长的抑制率较乳酸菌组增长了0 . 6 %-9.4%,9 6 h 抑制率达到了 37.1%;培养6 h 的黄曲霉孢子生长抑制率较乳酸菌组增长了 0 . 2 %-6 1 %,24 h 抑制率达到93.6%;产黄曲霉毒素氏抑制率较乳酸菌组提高10.3%-56.6%,2 4 h 抑制率达到了 97.3%.硒浓度达到2 5 滋g/mL的富硒乳酸菌对于黄曲霉生长的抑制率、黄曲霉孢子生长抑制率和产黄曲霉毒素玖抑制率均达到最大.结果提示,富硒乳酸菌对于黄曲霉菌落的生长、孢子萌发以及黄曲霉毒素的产生都有一定程度抑制作用,并且硒浓度达到25μg /m L,抑制效果最好.[
To study inhibitory effect of different concentrations selenium content in se-enriched lactobacillus on the growth and toxin-producing effect of Asporgillus,we determined the effect of Aspergillus colony,flavus and toxin production's growth inhibition rate by Lactobacillus,cultured in MRS liquid medium with 10,15,20,25 μg/m L.The results showed that inhibition ratio of Aspergillus growth effected by se-enriched Lactobacillus cultured in 10 ~ 25 μg/m L sodium selenite concentration for 48 h increased by 0.6% ~ 9.4% and inhibition ratio reached to 37.1% for 96 h,inhibition ratio of Aspergillus flavus for 6 h increased by 0.2% ~ 61% compared with lactic acid bacteria group and inhibition ratio reached to 93.6% for 24 h.The growth inhibition rate of aflatoxin B1 production increased by 10.3% ~ 56.6% compared with lactic acid bacteria group and inhibition ratio reached to 97.3% for 24 h.The growth inhibition rate of Aspergillus colony, flavus and aflatoxin production B1 reached the maximum under the lactic acid bacteria containing 25 μg/m L selenium concentration.These results suggested that se-enriched Lactobacillus presented some inhibition to the growth of Aspergillus flavus coenobium,spore germination and the production of aflatoxin,inhibitory effect was the best when the concentration of Se reached 25 μg/m L.
