摘要 我国老龄化趋势正在加剧,养老机构普遍缺乏营养专业人员的指导和规范化的膳食服务体系。本文在对国内外老年人营养现状、营养不良原因及我国养老机构膳食服务标准及管理现状进行分析的基础上,对养老服务业膳食服务规范进行了研究,提出养老服务业膳食服务规范框架,包括遵循原则、膳食服务内容、服务规范和服务管理办法。 China aging process has been accelating at present. Although many measures were taken in order to provide high quality services for old people in eldly care organizations, the advisements of nutrition from professional staff and service standard in these organizations are still limited. Based on the analysis of frail eldly nurtition status, reason of malnutrition and dietary standards and management status, a tentative tentative study of dietary service standards in Chinese eldly care service was conducted in this paper. The frame of dietary service standards includes principle, service subject, service standard, as well as management measure.
