摘要
主要对反丁烯二酸酯类化合物的抑菌性能与分子结构之间的关系进行分析,重点探讨了此类抑菌剂分子结构与抑菌活性之间定量构效关系及其改性化合物的抑菌活性,旨在为新型的反丁烯二酸酯类防腐剂的开发及其应用提供参考。
The purpose of the study was to firstly investigate antibacterial property of fumaric acid esters and their structure-activity relationships.Then the studies of quantitative structure-activity relationship were introduced of fumaric acid esters.Lastly,the antibacterial property of modified fumaric acid esters was also introduced.Given above,it was helpful to develop efficient,safe and convenient fumaric acid esters and extend their food application.
