Discussion on the Contents and Characteristics of Dietary in Song and Yuan Dynasties

宋元时期,中外饮食文化交流呈现不同态势。通过采用历史文献法,对海外饮食文化的传入情况与中国饮食文化的输出情况的具体史料进行分析,发现宋元时期中外饮食文化交流表现出:路线转向海上;回回饮食开始在中国孕育;交流主体由政府流向民间;政府开始涉足海外贸易;交流的主要内容为农作物的引入与食品技术的输出;大量农作物的引入,影响中国日常饮食结构的特征。

In the song and Yuan dynasties, owing to the overland Silk Road blocked and the development of the maritime industry, thriving Maritime Silk Road, Chinese and foreign food exchanges has taken on a new dynamic. This paper focused on the analysis of the interaction between the exchange of Chinese and foreign food, in order to mastered the offshore diet of incoming raw materials and processing technology, raw materials, processing of Chinese food products, and storage technologies, diets and habits of the output, then found out the song and Yuan dynasties the new characteristics of Chinese and foreign food culture exchange.
