Safflower oil contains linoleic acid, vitamin E, flavonoids, β-carotene and other biologically active substances. It is a good nutrition and health care functions, with good development prospects. The main physiological function, extraction and refining process and the current market situation of safflower seed oil have been reviewed, and prospects of its application are also put forward.
