天冬氨酸蛋白酶的研究及其在饮料业中的应用

Research and Application in Beverage Industry of Aspartic Proteases

摘要 天冬氨酸蛋白酶是一类在酸性条件下有活性的蛋白水解酶,广泛存在于多种生物中。对天冬氨酸蛋白酶的性质和作用机制进行了综述,并对天冬氨酸蛋白酶作为澄清剂在饮料业中,尤其是在葡萄酒行业的潜在应用进行了深入探讨。 Aspartic proteases is a kind ofproteolytic enzyme which is active in acidic conditions, and is found across all forms of life. The properties and mechanisms of action of aspartic proteases were summarized, and the potential application ofaspartic proteases as clarifying agent in the beverage industry were thoroughly discussed, especially in wine industry.
