摘要 猴头菇作为一种食药用菌,有着悠久的历史,在亚洲国家广泛食用。这种蘑菇具有多种生物学作用,如调节免疫、抗肿瘤、降血脂、抗老年痴呆、抗胃炎、神经保护等。因此,它既可以作为药物又可以作为保健食品来进行资源开发。近几十年来,关于猴头菇生理功能的研究有了很大进展。通过对猴头菇生化和药理学的研究,可以发掘猴头菇用于预防和治疗威胁人类疾病的潜力。 Hericium is a type of edible-medicinal fungi, which has a long history and is widely eaten in Asian countries. This mushroom has a variety of pharmacological activities, such as immune regulation, anti- tumor, anti-hyperlipidemia, anti-senile dementia, anti-gastritis, nerve protection etc. Thus, Hericium has the potential for commercial development as health-promoting food or medicine. In recent decades, research on the physiological function of Herieium has made great progress. The latest researches about Hericium have provided an overview on the biochemical and pharmacological function of Hericium.
