绿豆中植酸和单宁对钙吸收的影响 被引量:2

Effects of Phytic Acid and Tannin from Mung Bean on Calcium Absorption

摘要 通过测定绿豆中的植酸、单宁、钙及基础饲料中的钙含量,特制7组饲料喂食小鼠,研究植酸、单宁含量不同的各组饲料对处于生长期的小鼠钙吸收的影响。结果表明:在小鼠体重的增长过程中第1-5组间小鼠最终体重无显著变化(P〉0.05);饲料中植酸和单宁含量相对较高的第6组和第7组间小鼠的体重也无显著差异(P〉0.05),但都与第1-5组有显著差异(P〈0.05)。在钙的表观吸收率方面,植酸和单宁含量最高的第7组钙的表观吸收率最低[(39.26±2.61)%,(n=8),]植酸和单宁含量较高的第6组次之[(42.10±2.86)%,(n=8)],这两组数据与其他5组均有显著差异(P〈0.05)。上述动物试验结果表明:绿豆中的植酸和单宁对钙的吸收具有一定的抑制作用。 By determining phytic acid,tannin and calcium in mung bean and calcium content in basic diet,7 special groups of mouse diet were prepared,and the effects of feed groups with different phytic acid and tannin content on calcium absorption of mice in growth period were studied. The results show that the final weight of mice has no significant changes among the 1—5th groups in the process of body weight increase( P〉0. 05). Although the final weight of the 6th and 7th groups with higher phytic acid and tannin content has no significant changes( P〉0. 05),the differences are significant( P〈0. 05) compared with the 1—5th groups. In terms of calcium absorption rate,mice in the 7th group with the highest phytic acid and tannin content have the lowest calcium absorption rate[( 39. 26±2. 61) %,( n = 8) ],mice in the 6th group with higher phytic acid and tannin content have lower calcium absorption rate [( 42. 10±2. 86) %,( n = 8) ],and the differences of the two sets of data are significant compared with the other 5 groups( P0. 05). The results of the above animal experiments show that phytic acid and tannin from mung bean have certain negative effects on calcium absorption.
