基于ISEM及FSEM综合评价中药伴侣的掩味效果 被引量:7

A comprehensive evaluation of the masking effect of traditional Chinese medicine companion based on ISEM and FSEM

摘要 目的:评价苦味掩味剂——3种口味的中药伴侣与β-环糊精对复方中药汤剂"清热化滞汤"的掩味效果。方法:以中药复方汤剂"清热化滞汤"作为苦味载体,采用经典人群口感评价方法,以"排序法+评分法"和"模糊综合评价"两种评价体系综合评价掩味剂对"清热化滞汤"的掩味效果。"排序法+评分法"以清热化滞汤的"苦度"为感官评价指标;"模糊综合评价"以"甜度、香气、异味、整体口感"为感官评价指标,评语为"很好"、"好"、"中"、"差"、"很差"。结果:"排序+评分法"评价清热化滞汤掩味效果时:在概率P=0.05时,3种口味的中药伴侣>β-环糊精>原液。"模糊综合评价"评价清热化滞汤的掩味效果时:3种口味的中药伴侣的峰值均出现在"好"的位置,β-环糊精峰值出现在"中",原液峰值出现在"差",即3种口味的中药伴侣>β-环糊精>原液。结论:中药伴侣可用于复方中药汤剂的掩味,改善中药汤剂的不良口感,提高患者服药的依从性。 Objective: To evaluate the masking effect of three kinds of traditional Chinese medicine companions and beta-cyclodextrin for Qingre Huazhi decoction which is a compound traditional Chinese medicine.Methods: With Qingre Huazhi decoction as a bitter vector,the taste masking effects of the test agents were investigated by classical population taste evaluation method base on two kinds of comprehensive evaluation systems i. e.,sorting plus scoring method and fuzzy comprehensive evaluation method. Bitterness was adopted as the index of the sorting plus scoring method,while fuzzy comprehensive evaluation was carried out using sweetness,aroma,peculiar smell,and the general taste for sensory evaluation,graded as "very good","good","middle","poor",and"very poor". Results: When using the sorting plus scoring method at a significance level of 0. 05,the masking effects of the test agents were sequenced in the following order: three kinds of traditional Chinese medicine companion beta-cyclodextrin stock solution. When using the fuzzy comprehensive evaluation method,the peak masking effects were judged as "good"for the three kinds of traditional Chinese medicine companions,"middle"for beta-cyclodextrin,and "poor"for stock solution,which indicating that the masking effects of the test agents were sequenced in the following order: three kinds of traditional Chinese medicine companions beta-cyclodextrin stock solution. Conclusion: Traditional Chinese medicine companions can be used to mask thus improve the taste of compound traditional Chinese medicine decoctions,and increase patient medication compliance.
