摘要 概述了蛋白质组学研究中主要应用的技术与工作流程;分别从水产生物生长环境、捕获方式、饲料成分、加工与贮藏方式等方面介绍了蛋白质组学技术在水产品品质研究中的应用;从微生物污染物鉴别、过敏原检测、原料鉴别3个方面综述了蛋白质组学技术在水产品安全研究方面的应用现状;对目前蛋白质组学技术应用中存在的诸如2-DE电泳重现性差以及由水产品蛋白质分子量大、溶解度低、离子化水平低带来的局限性等问题进行了探讨,并就此展望了新技术开发、多种组学方法结合和完善水产生物基因与蛋白质数据库等方面的发展前景,旨在为更好地开展水产品蛋白质组学研究提供参考。 In order to carry out proteomics studies in terms of aquatic products quality and safety control, the main proteomics research technologies and typical workflows were firstly reviewed. Then, the growth environment, captured methods, feed composition, as well as processing and storage methods were discussed in this paper to evaluate the applications of proteomics in the field of aquatic products quality studies. Identification of pathogenic microorganisms ,allergen detection and aquatic products materials authentication were listed in aquatic products safety studies section. At the end, the problems such as low reproducibility of two dimensional electrophoresis, as well as the limitations caused by high molecular weight, low molecular weight and low ionization levels of aquatic products protein were discussed. Besides, development of new proteomics research technologies, combination of proteomics methods and consummation of gene and protein data base were also prospected in this paper. This review could offer reference for the proteomics researchers engaged in aquatic products.
