摘要
[目的]通过热重分析研究椰子油的氧化稳定性及动力学。[方法]分别在不同气氛(空气、氮气)和不同升温速率(2、5、10、20、25、40℃/min)下对椰子油进行氧化稳定性分析和动力学分析。[结果]椰子油在氮气气氛下更稳定;相同条件下,升温速率越快,氧化分解温度越高。由Flynn-Wall-Ozawa法计算椰子油的活化能为60.50 k J/mol。[结论]氮气可以防止椰子油氧化;升温速率越快,椰子油越不稳定。研究可为椰子油的加工和储藏提供理论依据。
[Objective] To investigate oxidation stability and kinetic of coconut oil by thermogravimetry.[Method] Oxidation stability and kinetic of coconut oil were studied under different atmospheres (air,nitrogen) and different heating rates (2,5,10,20,25,40 ℃/min).[Result] Coconut oil was more stable under nitrogen atmosphere.Under the same conditions,faster heating rate led to the higher decomposition temperature.The activation energy of coconut oil was 60.50 kJ/mol by Flynn-Wall-Ozawa method.[Conclusion] Nitrogen can prevent the oxidation of coconut oil.Faster heating rate leads to more instability of coconut oil.This research provides theoretical basis for the processing and storage of coconut oil.
