摘要
介绍了槲皮素镁的合成方法,通过紫外光谱、红外光谱、核磁氢谱和同步热分析进行了表征。氢谱显示镁离子在3-OH和3’-OH位置与槲皮素配位,同步热分析确证了这个结果。通过1,1-二苯基-2-三硝基苯肼(DPPH)法测定了槲皮素镁清除自由基的能力,结果显示,槲皮素镁清除自由基的能力没有槲皮素强。经常食用含有槲皮素的黄酮类蔬菜和水果,如洋葱、苹果、柑橘等,可清除体内的自由基,使机体免受自由基的损伤,对降低人体内重金属离子的含量起着重要的作用。
The synthesis method of quercetin magnesium complexes was introduced.The composition of the complex was characterized by UV-Vis,IR,^1 H NMR and synchronous thermal analysis techniques.NMR spectra showed that magnesium coondinated at 3-OH and 3′-OH position in the quercetin complex,and simultaneous thermal analysis confirmed this result.The antioxidant activity of the complex was evaluated using 1,1-diphenyl-2-picrylhydrazyl(DPPH).The radical scavenging activity of free quercetin was decreased after chelation with magnesium.To eat bioflavonoids class food containing quercetia such as apple,onion,orange,ginkgo and buckwheat often in daily life may help to clear free radicals in peoples body,to protect the body from injury of free radicals and to reduce the content of heaving metal ions in human body.
