摘要
从海带中提取了褐藻胶,通过固液分离、沉淀、漂白、转化、脱水等方法对其进行纯化,并通过正交试验确定了最佳的提取工艺条件;利用褐藻胶的良好延展性制作可食性膜,研究了褐藻胶、甘油、氯化钙的质量浓度对膜断裂强度的影响。结果表明,以质量分数为9%的NaHCO_3为消化剂在55℃下消化2 h,褐藻胶的提取率最高;在采用质量分数为2.5%的褐藻胶溶液于玻璃模具上加入质量分数为0.8%的甘油,用质量分数为4%的氯化钙溶液交联20 min的条件下,制得可食性膜的断裂强度最高。
The technology of algin extraction from kelp for preparing edible fresh wrap is studied in this paper. Firstly,the crude algin is extracted from kelp,which is purified by the following methods: solid-liquid separation,precipitation,bleaching,transformation,dehydration. Besides,based on the orthogonal experiment results,we determine the optimal concentration,time and temperature of digestion. Then,based on the good ductility of algin,we prepare the edible fresh wrap,and explore the different influence factors of preparing the film.
