摘要
目的了解食品从业人员中分离的金黄色葡萄球菌产生肠毒素的情况,为由此引起的食源性疾病防治提供科学依据。方法采集食品加工从业人员手部拭子进行金黄色葡萄球菌检测,对分离124株菌株采用ELISA方法进行肠毒素检测。结果 124株金黄色葡萄球菌中100株肠毒素检测为阳性,阳性率为80.64%。结论食品从业人员健康需要加强监管,防止食物在加工制作过程中被金黄色葡萄球菌的污染,以预防食物中毒的发生。
Objective To investigate the enterotoxin of Staphylococcus aureus( S. aureus) separated from the food industry employees,and to provide the scientific evidence for foodborne disease prevention and control.Methods There were 124 plasma- coagulase positive strains of S. aureus detected the enterotoxin from the hand swabs of food industry employees with the enzyme- linked immunosorbent assay( ELISA). Results A total of 100 positive strains of enterotoxin were detected from 124 plasma- coagulase positive strains of S. aureus with 80. 64% positive rate. Conclusion The health supervision should be strengthened among the food industry employees,to prevent the pollution of S. aureus during the food production progress and food poisoning.
