摘要 主要研究了苦瓜籽皂苷的提取工艺及抑菌活性。通过正交试验确定苦瓜籽皂苷的最佳工艺条件,即超声波功率为240W,超声波提取时间为40 min,乙醇浓度为85%,液料比为15,此条件下苦瓜籽皂苷提取率达到1.85%。苦瓜籽皂苷具有较好的抑菌活性,对枯草芽孢杆菌、金黄色葡萄球菌、黑曲霉和根霉的MIC为6.25%,对大肠杆菌的MIC为12.5%,对沙门氏菌和酿酒酵母的MIC为25%。 This study mainly discussed the extraction of the saponin from bitter melon seeds and its antibacterial activity. The optimum extraction condition of extracting saponin from bitter melon seeds was determined by orthogonal test, such as extraction power for 240 W, extraction time for 40 min, ethanol concentration for 85%, and the solution and material ratio for 15, and the extraction yield reached 1.85%. The results showed that the saponin extracted from bitter melon seeds had strong antibacterial activity. The MIC of saponin from bitter melon seeds was 6.25% to Bacillus subtilis, Staphylococcus aureus, Aspergillus niger and Rhizopus, 12.5% to Eseherichia eoli, and 25% to Salmonella and Saccharomyees eerevisiae.
