摘要
从储存条件、原料大豆和加工工艺3个方面,分析研究一级大豆油抗冻性。结果表明,储存条件中温度对其影响较大;不同原料产地大豆生产的大豆油因脂肪酸组成不同,其抗冻性存在一定差异性;加工工艺的影响则是通过改变油品色素等其他成分含量进而改变成品油抗冻性。由此可见,储存条件、原料大豆和加工工艺都会对一级大豆油抗冻性产生影响。
This paper studies from the storage conditions, the raw material soybeans and analysis and research level of soybean oil processing technology three aspects studies. The resuhs show that the temperature in the storage conditions have great influence; different raw materials origin of soybean production of soybean oil with different fatty acid composition, its frost resistance there exist certain differences; the influence of the processing technology is by changing the oil content of pigments and other components, in turn, change the oil frost resistance. Thus, storage conditions, the soybean and processing technology of raw material will affect level of soybean oil frost resistance.
