摘要 甜菊糖苷是一种天然低热值的新型甜味剂,被誉为继甘蔗和甜菜之后的"世界第三糖源",广泛用于食品、饮料、医药、日化工业等。其甜度为蔗糖的250~300倍,具有高甜度、低热量、纯天然、安全性高等特点。其在食品行业、保健品行业、医药等有极大的利用价值。在一些国家和地区甜菊糖苷被广泛的添加在食品、饮料、调味料中。本文主要对甜菊糖苷的功能及其应用进行综述。 Stevioside is a natural low calorific value of the new sweetener,known as " after cane and beet sugar," the world's three sugar source,widely used in food,beverage,medicine,daily chemical industry and so.At present,China is the world's leading producer and exporter of stevioside.Its sweetness is 250-300 times that of sucrose,high sweetness,low calorie,pure natural,high security.It has great value in use in the food industry,health care products,pharmaceutical and other industries.In some countries and regions of stevioside is widely added in food,beverage,seasoning.This paper focuses on the function and application of stevioside were reviewed.
