不同红色酿酒葡萄中多酚物质的差异性研究 被引量:4

摘要 利用高效液相色谱检测蓬莱产区赤霞珠、品丽珠、小味儿多3种葡萄果皮与籽中15种单体酚和5种花色苷的含量。结果表明,3个品种的白藜芦醇含量基本一致;果皮中花色苷含量以小味儿多最高,赤霞珠与品丽珠基本一致;15种单体酚总量以小味儿多最高,品丽珠的最低。 The content of 15 kinds of free phenol and 5 kinds of anthocyanins in grape peel and grape seed of three kinds of red wine grape in-cluding Cabernet Sauvignon, Cabernet Franc and Petit Verdot in Penglai regions was measured by HPLC. The results suggested that, all the three kinds of wine grape had almost the same content of resveratrol, Petit Verdot had the highest content of anthocyanins in grape peel (Caber-net Sauvignon had almost the same content of anthocyanins as Cabernet Franc), and the total content of 15 kinds of free phenol was the highest in Petit Verdot and the lowest in Cabernet Franc.
