摘要
为明确翅柃古茶的经济价值,对翅柃古茶的茶叶内含物质进行检测,并将翅柃古茶的氨基酸、茶多酚类、咖啡碱、可溶性总糖、水浸出物含量5项指标检测结果与国内几个主要绿茶品种进行比较。结果表明:大茶沟古茶的游离氨基酸总量很低(0.90%),较西湖龙井等中国著名绿茶低72%~80%;茶多酚含量为12.40%,接近14%~18%的最佳品质范围,低于西湖龙井等著名绿茶,故苦涩味相对最淡;儿茶素总量为13.320%,略高于信阳毛尖等著名绿茶,其中酯型儿茶素含量极低,为0.01%,儿茶素类各组分的比例与信阳毛尖等著名绿茶相比差异巨大,儿茶素(C)是其绝对主体部分(11.01%),故滋味爽口,有涩味,苦味极淡;咖啡碱含量极低(0.30%),比西湖龙井等著名绿茶低约93%,故其苦味较西湖龙井等著名绿茶淡;可溶性糖含量为14.70%,比西湖龙井等5个绿茶茶样高359%~461%,在茶汤的甜醇度上优势明显;水浸出物含量为48.20%,比信阳毛尖高约10%,形成了信阳大茶沟古茶"鲜浓、爽口、甜醇、芳香"的口感特征,极具科研价值和开发价值。
In order to clarify the economic value of Fin Eurya ancient tea,the embedded substances of Fin Eurya ancient tea were detected,and the contents of amino acids,polyphenols,caffeine,total soluble sugar and water extract of Fin Eurya ancient tea were compared with several major domestic green tea varieties.The results showed that the amount of amino acids of Fin Eurya ancient tea was very low( 0. 90%),which decreased by 72% —80% conpared with the the other Chinese famous green tea such as West Lake Longjing. The polyphenol content of Fin Eurya ancient tea was 12. 40%,which was near to the best quality range of 14% —18%,lower than the other tea samples,so it has relatively light bitter taste. The total amount of catechin of Fin Eurya ancient tea was 13. 320%,which was slightly highter than that of other famous green tea. Among the catechin composition,ester catechin cotent was very low,the content was 0. 01%,the proportion of catechin components of Fin Eurya ancient tea had a huge difference compared with the other famous green tea such as Xinyangmaojian. Catechin( C) was the main part( 11. 01%),so it had a refreshing taste,astringency and very light bitterness. The caffeine content of Fin Eurya ancient tea was very low( 0. 30%),which decreased by 93% compared with other famous green tea such as West Lake Longjing,so the bitterness was very light compared with the other famous green tea.The total soluble sugar content of Fin Eurya ancient tea was 14. 70%,which increased by 359% —461%compared with other famous green tea such as West Lake Longjing,and had obvious advantages in teasoup sweet. The water extract content of Fin Eurya ancient tea was 48. 20%,which was 10% higer than that of Xinyangmaojian. All of these indicators formed the taste characteristics of Fin Eurya ancient tea,tasty,sweet alcohol,aromatic,indicating that Fin Eurya ancient tea had a great scientific value and economic value.
