摘要
中国挂面生产设备和工艺水平快速提高,已初步具备现代食品工业的特征。文章系统阐述了挂面生产工艺及其主要技术参数,介绍了各工艺环节的不同设备及其应用特点,分析了各工艺环节影响产品质量的主要因素,展望了中国挂面生产设备与技术研发方向。
The level of process and production equipment of dried Chinese noodle already has the characteristics of the modern food industry.This paper systematically states the dried noodle producing process and main technological parameters.And the characteristics and application of various types of equipments were also introduced.Furthermore,the main factors affecting noodle quality were analyzed.Finally,the development of processing technology and equipment of dried noodle was prospected.
