2010—2012年中国居民马铃薯及其相关产品消费现状 被引量:4

Status of consumption of potato and its related products in Chinese residents from 2010 to 2012

摘要 目的分析2010—2012年中国居民马铃薯及其相关产品的消费情况。方法使用2010—2012年中国居民营养与健康状况监测中连续3天24小时膳食回顾调查数据,分析中国2岁以上居民的马铃薯及相关产品的消费情况。结果马铃薯人日均消费量为29.2 g,其中城市为20.1 g,农村为37.7 g。马铃薯的食用率为40.1%,其中城乡分别为35.7%和44.2%。食用人群的马铃薯平均消费量为72.8 g,其中城乡分别为56.2 g和85.3 g。马铃薯粉和薯条/薯片的人日均消费量分别为0.2 g和0.04 g,食用率分别为0.4%和0.2%。结论中国居民马铃薯的食用率及消费量均较低,推进马铃薯主粮化战略需要在积极推进马铃薯主食产品及产业开发的前提下,对中国居民膳食结构加以正确的引导,提高居民对马铃薯营养价值的认识,增加居民摄入。 Objective To analyze the status of consumption of potato and its related products in Chinese residents from 2010 to 2012. Methods Data was from China Nutrition and Health Surveillance 2010—2012. Information on the consumption of potato and its related products was collected using the 24 h recall method for three consecutive days. Results The average consumption of potatoes for Chinese residents was 29. 2 g / d,20. 1 g for urban residents,37. 7 g for rural residents. The consumption rate of potato was40. 1%,which were 35. 7% and 44. 2% in urban and rural areas. The average consumption of potato eaters was 72. 8 g,56. 2 g and 85. 3 g for urban and rural areas respectively. The average consumptions of potato powder and chips were 0. 2 g and 0. 04 g,and the edible rate were 0. 4% and 0. 2% respectively. Conclusion At present,the edible rate and the consumption of potato were lower in Chinese residents. To promote potato staple strategy should actively promote potato food products and industrial development,guide the dietary structure of Chinese residents,and improve the residents' understanding of the nutritional value of potato.
