新疆南瓜子营养成分及脂肪酸组成分析 被引量:7

摘要 对新疆南瓜子的营养成分及脂肪酸组成进行了测定分析。结果表明:南瓜子仁含46.7%的粗脂肪,37.2%的粗蛋白质;南瓜子油碘值(I)高达118 g/100 g,不皂化物含量为9.02 g/kg;南瓜子油含有丰富的不饱和脂肪酸,其中油酸63.0%、亚油酸20.2%、亚麻酸6.8%;南瓜子仁中K(4 250 mg/kg)、Mg(3 741 mg/kg)、P(3 150 mg/kg)、Ca(1 943 mg/kg)、Na(39.25 mg/kg)、Zn(35.81 mg/kg)、Fe(31.59 mg/kg)、Mn(21.34 mg/kg)、Cu(11.68 mg/kg)矿物质元素的含量比较丰富。因此,新疆南瓜子是一种极具有开发价值的植物蛋白资源和油料作物。 The nutritional components and fatty acid composition of pumpkin seed in Xinjiang were deter- mined and analyzed. The results showed that the contents of crude fat and crude protein of pumpkin seed kernel were 46.7% and 37.2%, respectively. The iodine value of pumpkin seed oil reached 118 gl/100 g and the content of unsaponifiable matter was 9.02 g/kg. The pumpkin seed oil was rich in unsaturated fatty acids, in which the contents of oleic acid, linoleic acid, and linolenic acid were 63.0%, 20.2% and 6.8% , respectively. The pumpkin seed kernel was rich in mineral elements, such as K (4 250 mg/kg), Ms(3 741 mg/kg), P ( 3 150 mg/kg), Ca ( 1 943 mg/kg), Na ( 39.25 mg/kg), Zn ( 35.81 mg/kg), Fe ( 31.59 mg/kg), Mn (21.34 mg/kg), Cu ( 11.68 mg/kg). Therefore, pumpkin seed in Xin- jiang was a kind of vegetable protein resource and oil crop with extreme development value.
