沈阳东陵和珲春孟岭产寒富苹果贮藏中品质变化比较

The quality comparison of Hanfu apple in Dongling district of Shenyang and Mengling of Hunchun during the storage

为了解当地产寒富苹果的质地及贮藏性,以珲春和沈阳产的寒富苹果果实为试材,比较了二者质地及贮藏过程中品质的变化差异。结果表明:沈阳产的果实单果重显著高于珲春产的,但果形指数没有显著差异;不同产地的寒富苹果光亮度、红绿指标以及色泽比有显著差异;沈阳产的果肉细胞和细胞间隙较小,珲春产的相反;两地产果实可溶性固形物含量变化趋势相同,但沈阳产果实可溶性固形物含量从贮藏初期开始一直高于珲春产的;沈阳产和珲春产果实可滴定酸含量峰值分别在贮藏后90和60d出现;沈阳产的果实硬度在贮藏当日低于珲春产的,但在贮藏过程中下降缓慢,而珲春产的下降迅速;二者在贮藏初期果实失重率保持一致,但贮藏60d后,沈阳产的果实失重率显著高于珲春产的。可见,珲春产寒富苹果果实偏小、质地疏松、可溶性固形物含量低、酸度下降早。总之,软化快,但抗蒸发能力强。

Here,Hanfu apples produced at Shenyang and Hunchun as materials,comparative studies on changing of texture and quality during the storage of apples produced at different locations were conducted.The result showed that the single fruit weight of apple in Shenyang was significantly higher than that in Hunchun,but their fruit shape indexes were not significantly different.Hanfu apples produced at the two places revealed significant differences in luminance,red and green indicator and luster ratio.Shenyang apple had smaller pulp cells and intercellular spaces than Hunchun apple.During the storage,Shenyang apple had higher soluble solid content than Hunchun apple,but both apples showed similar changing trend.The peak of titratable acids in Shenyang apple appeared at 90 days during storage,whereas that in Hunchun apple appeared at 60 days.Although the fruit hardness of Shenyang apple was less than Hunchun apple when picking,but declined very slowly while Hunchun apple＇s hardness decreased sharply.Both apples had the same weight lose rate at the beginning of the storage,but Shenyang apple lose significantly more weight than Hunchun apple after 60 days of the storage.Overall,Hanfu apple produced at Hunchun hadthe characters of smaller fruit,loose texture,lower soluble solid content,and its acidity declined earlier than Shenyang apple.The fruits of Hunchun apple was softening fast,but it had strong ability to resist evaporation.
