玉米赤霉烯酮的毒性及脱毒研究进展 被引量:6

摘要 玉米赤霉烯酮是由某些真菌产生的次级代谢产物,在受污染的玉米等谷物和饲料中广泛存在,对人和动物具有很强的危害性。本文总结了玉米赤霉烯酮的毒性和危害,主要包括生殖发育毒性、致癌性、免疫毒性以及肝肾毒性。同时总结了玉米赤霉烯酮的脱毒方法,主要包括物理法、化学法和生物法。分析了玉米赤霉烯酮在当前研究中存在的问题和发展趋势。 Zearalenone(ZEN) is the secondary metabolites of some fungi,which is widely found in polluted grain and feed,and shows danger to human and animals.The toxic effect of ZEN,including reproductive toxicity,carcinogenicity,immunotoxicity,and liver and kidney toxicity,was summarized.Detoxification methods of ZEN,involved physical method,chemical method and biological method were studied.In addition,defects in current research were put forward and the trend of development in future was discussed.
