摘要
以钴-60为放射源,研究了盒装豆腐的辐照灭菌处理工艺。研究采用静态堆放照射方法,分别采用0、2、4、6 k Gy剂量进行处理,在常温(20℃)下贮藏3 d后测定菌落总数、蛋白质、脂肪等指标。结果表明辐照剂量为4 k Gy时,菌落总数符合国家标准,蛋白质、脂肪的含量无明显变化。
Radioactive cobalt-60 was studied irradiation sterilization treatment process boxed tofu. Studies using a static pile irradiation method, were used 0, 2, 4,6 kGy dose treatment, storage for 3 days at room temperature (20℃) measured total bacterial count, protein, fat and other indicators. The results showed that the radiation dose for 4 kGy, the total number of colonies in line with national standards, protein, fat content did not change.
