冷却牛肉作为牛肉的主要消费方式,代表生鲜牛肉生产和消费的发展方向,牛胴体嫩化成熟的过程是在冷却间内完成。冷却间的有效利用对于控制投资、节约成本、提高产品品质都具有重要意义。
As the main form of consumption of beef,chilled beef represented the development direction of fresh beef production and consumption. The process of tenderization and mature of beef carcass was done in cooling room. It was of great significance to control investment,save cost and improve the quality of products to effectively utilize of cooling room.
