黑老虎籽功能成分分析及其应用前景展望 被引量:22

摘要 对黑老虎籽的主要功能成分进行分析。研究结果表明:黑老虎籽中粗多糖的含量为2.68 g/100 g,总黄酮(以芦丁计)的含量为1.84 g/100 g,总皂苷(以人参皂苷计)的含量为0.21 g/100 g。还含有维生素B1、维生素B2、维生素C、维生素D、维生素E,以及丰富的矿质元素,特别是人体必需的微量元素铁、锌、硒。黑老虎籽中共含有12种脂肪酸,其中,不饱和脂肪酸含量占脂肪酸总量的87.19%,亚油酸的含量占不饱和脂肪酸的比例高达81.18%。除此之外,黑老虎籽中还包括16种氨基酸,其中7种为人体的必需氨基酸,9种为非必需氨基酸,氨基酸的种类较为齐全。由此可见,黑老虎籽可以开发具有抗氧化、抗疲劳、延缓衰老、降血脂、降血压、调节中枢神经、提高免疫力等功能的保健食品。 The main functional components of Kadsura. coccinea seeds were analyzed. The results showed that the content of crude polysaccharide was 2.68 g/100 g, the content of total flavonoids (rutin) was 1.84 g/100 g and the total saponins (ginsenosides) content was 0.21 g/100 g. It contained vitamin B1 vitamin B2, vitamin C, vitamin D, vitamin E as well as the abundant mineral elements, especially the essential trace elements, such as Fe, Zn, Se. K. coccinea seeds had 12 kinds of fatty acids, in which contained 87.19%unsaturated fatty acids. It was worth mentioning that linoleic acid content accounted for the proportion of unsaturated fatty acids as high as 81.18%. In addition, the result showed that 16 amino acids were found in K. coccinea seeds, including 7 es-sential amino acids and 9 nonessential amino acids, the kinds of amino acids was relatively complete. It could be derived that K. coccinea seeds coud develop functional food which had the effect of antioxidant, antifatigue, antiaging, antilipidemic, antihypertensive, regulating central nervous system or improving immunity.
