摘要
试验对猴头菇多糖酸水解技术、水解物体外抗氧化活性进行研究。以水解度和水解物的体外抗氧化活性为指标,采用L9(3-3)正交试验设计对酸浓度、反应时间和反应温度进行参数优化。结果表明,当盐酸浓度为2 mol/L,水解温度为90℃,反应时间为5 h时,猴头菇多糖的水解度为65.47%,还原力吸光度为0.267,对羟自由基、DPPH自由基和超氧阴离子自由基的清除率为73.89%,97.27%和29.87%;研究结果初步证明猴头菇多糖水解产物是一种重要的活性物质,为猴头菇多糖的开发提供了技术方法和理论依据。
Study on acid hydrolysis and antioxidant activity of hydrolyzate of Hericium erinaceus polysaccharide. Adopt L9(33) orthogonal design optimized acid concentration, reaction time and temperature parameters, using the degree of hydrolysis and antioxidant activity in vitro of the hydrolyzate as indicators. The results showed that when the concentration of hydrochloric acid 2 mol/L, hydrolysis temperature at 90 ℃, the reaction time 5 h, the degree of hydrolysis of polysaccharides Hericium erinaceus was 65.47%, reducing power absorption was 0.267, the hydroxyl radical, DPPH radical and superoxide anion radical scavenging was 73.89%, 97.27% and 29.87%. The results indicated the Hericium erinaceus polysaccharide hydrolysates acts as an important bioactive substance, supporting the development and ultilization of the Hericium erinaceus polysaccharides.
