掺假燕窝的元素组成分析及鉴别研究 被引量:6

摘要 采用ICP-MS测定各类真品燕窝和掺假燕窝样品的元素组成,利用主成分分析构建燕窝鉴别的综合评价模型,通过逐步判别方法建立判别函数鉴别掺假种类。主成分分析结果表明,前3个主成分提取了原来14个指标74.34%的信息;各掺假样品的主成分得分随着掺假比例的增大,有明显程度的降低,且都小于真品燕窝的得分;逐步判别分析结果显示在剔除5种元素变量的情况下,保留Na、Mg、Fe、Mn、Ni和Cu等9种元素变量即可实现对燕窝掺假种类的准确鉴别。说明以燕窝的各元素含量作为分析变量,结合主成分分析法和逐步判别分析,可以实现掺假燕窝真假鉴别和掺假种类鉴别。 Measure the content of elements of the bird's nest and adulterate samples by ICP-MS, using principal component analysis to establish synthetical evaluation model, and discriminant function analysis applied to identify adulteration species by stepwise discriminant methods. Principal component analysis showed that the first three principal components contented 74.34% of the information of the original 14 variables; The principal component scores of the samples decreased significantly when proportion adulterant increased, and were less than bird's nest; Stepwise discriminant analysis showed that 5 kinds of elements were removed, leaving only Na, Mg, Fe, Mn, Ni, Cu, etc, and adulteration could be identified precisely through the leaved nine elements. The elements as the analysis variables, using principal component analysis and stepwise discriminant analysis, the false bird's nest could be identified and adulteration could be distinguished.
