摘要
概述了国内外发酵乳制品中应用的直投式发酵剂的生产现状,从制备过程中的关键技术和贮藏过程中的影响因素两个方面阐述了直投式发酵剂的研究进展,提出了直投式发酵剂未来的研究方向。
In this article, the authors reviewed the current productions of DVS in fermented milk in the domestic and overseas. The review summarized two aspects of current researches including the key techniques in the preparation and the influence factors in the storage of DVS. It also shows the directions of DVS in the future.
