Food supply chain security credit risk identification and evaluation

以乳业企业的应用为例,从食品供应链视角出发,通过对供应链核心企业、节点企业以及利益相关者的食品安全诚信风险识别,系统分析了每个环节存在的风险因素及造成的后果,在此基础上,运用风险矩阵分析法对食品供应链企业安全诚信风险因素等级进行评估和分级。利用此表识别和评估2008-2014年国内知名乳业企业安全诚信的200个食品安全事件。结果显示:加工环节中使用非食品原辅材料是最为关键的风险因素,其次是加工环节中非法滥用添加剂和采购环节中企业为降低成本,采购不合格食品或原料辅料等,评估结果可为我国乳业企业进一步实施安全诚信风险控制提供依据。同时,论文的研究对国内其它食品企业有效地采取食品安全诚信风险防范措施以及制定合理的诚信奖惩机制具有重要意义。

Take the application of Dairy enterprise as example, and from the perspective of food supply chain, identify the food safety credit risk of the core enterprise, the node enterprises and stakeholders in the supply chain to systematically analyzed every aspect of the presence of risk factors and consequences.Then, use the risk matrix analysis method to assess and classificate the level of risk factors in the food supply chain enterprise of safety. Use this table to identify and assess 200 food safety incidents of domestic well-known dairy enterprise security in- tegrity in 2008 - 2014.Results showed that using non-food raw materials in processing link is the most critical risk factors, followed by illegal abuse of additives in the processing link and enterprises in the procurement chain to reduce costs,purchasing unqualified food or raw materi- als, etc, the evaluation results can provide the basis for dairy enterprises in our country to further the implementation of safety integrity risk control.At the same time, the paper research on the domestic other food companies to effectively take food safety credit risk prevention mea- sures and fornlulate reasonable credit rewards and punishment mechanism is of great significance.
