质构穿刺检测石榴籽粒质地品质 被引量:13

Establishment of the Detecting Method on the Fruit Texture of Pomegranate by Puncture Test

摘要 采用质构仪(TA.XT plus)对完整石榴籽粒进行穿刺试验,研究不同探头(P/2和P/2N)反映石榴籽粒质地品质的差异,分析了不同品种、不同氮肥用量下石榴籽粒质构品质指标。石榴籽粒质构特性分析测试参数为:采用P/2柱状探头(直径2 mm),测前速度为1 mm/s,贯入速度2 mm/s,测后速度10 mm/s,最小感知力50 g,穿刺深度为石榴籽变形95%。通过运行Macro程序,在所得力/时间曲线及输出数据中,得到果膜强度、果肉硬度、果籽硬度以及口感层次感(陡升值)等质构特性的精确数据。不同石榴品种间质地品质差异显著;不同量施肥处理影响石榴质构特性,各处理间籽粒硬度差异不显著,施用氮肥(600 g/株)可显著增加果膜和果肉的硬度。 In this paper, ATA.XT plus te xture analyser was used to perform the puncture test with the seed of pomegranate. The texture differences reflected by probe(P/2 and P/2N) and the impacts of different varieties and N fertilizer amount to the texture of pomegranate seed were analyzed. The test conditions were as follows: the probe( P/2, diameter: 2 mm) was used to perform the puncture test, the speed before the test was 1 mm/s, the speed in the test was 2 mm/s, the speed after the test was 10 mm/s, the trigger type was auto( force) 50 g and puncture depth was 95% strain of the seed. After the enactment of the Macro program, the parameters could be received in the illustration curve as follows: aril break force, aril toughness, seed firmness( g), taste level.Difference of texture qualities was significant between different pomegranate varieties. Amount of different fertilizer treatments affected texture qualities, seed firmness was not significant in different treatment, and N4 treatment could increase the aril break force and aril toughness significantly.
