小麦面条是人类最早的加工食品——比较视野下的中国和地中海世界相关食物原材料考察

On Wheat-based Noodle, A Man's Earliest Processed Food:An Investigation on Raw Food Materials in China and the Mediterranean World from Comparative Perspective

摘要 为什么现代科学没在中国崛起?这是被科技史专家所公认的著名的"李约瑟难题",这个问题被认为是历史学的一大悖论。小麦面条在中国和地中海地区的诞生,阐明了这种历史悖论。为什么当小麦成为地中海世界最重要的谷物时,面食制造在中国北方崛起的时间却要早于地中海世界?回答这个问题的第一个推测是:在每个人的食物都有所分配的希腊罗马世界面食并非必需品:普通人吃稀粥,贵族吃精致的面包就是一种朴素的饮食。第二个推测是,这种食物模式通过一些犹太基督教的配方得到增强。而在中国,小麦面粉被做成一种新的谷物产品,它在与水混合时,比小米面粉更具弹性。古代中国对于通过食物原料自发分解而成的食品异常敏感,从中发现了复合蛋白质——面筋,因而,在欧亚大陆,中国人最早创造出了小麦面条产品。 Why is China a country, which witnessed no rise of (modern) science? This is the question acknowledged by scholars of science and technology as "the Needham Problem", a great paradox of history, which is illustrated by a good case of the birth of wheat-based noodle in China and the Mediterranean world. Needham, an author who collected a large amount of Chinese science and technology and cultural information, was much concerned about how to investigate where an invention first appeared. Why did wheat-based food manufacturing emerge earlier in northern China than in the Mediterranean world when wheat-based noodle was the most important cereal in the Mediterranean world? The first speculation is that wheat-based food was not a necessity in the Greco-Romanworld, where food was distributed to everyone. The second speculation is that the food pattern of this kind was ennhanced through Jewish Christian formula. In China, wheat flour was processed into a new kind of sereal procut, which was considered to be a very interesting material because of its higher elasticity over millet when mixed with water. The ancient Chinese were exceptionally sensitive to the foods developed through the spontaneous decomposition from raw food materials. Thus, the Chinese was the first people in the Eurasia who developed wheat noodle products.
