北京鸭和天府肉鸭屠宰性能比较

Comparison on Slaughter Performance of Beijing Duck and Tianfu Duck

[目的]探讨北京鸭和天府肉鸭屠宰性能的差异。[方法]测定43日龄北京鸭和天府肉鸭的屠宰性能指标,对各指标进行统计分析。[结果]结果表明,北京鸭的活重、屠体重、半净膛重、全净膛重、腿肌重、胸肌重、胸肌率均显著高于天府肉鸭(P<0.05);北京鸭和天府肉鸭内脏器官相对重量指数除脚重/体重这个指标差异显著(P<0.05),其他相对重量指数指标差异不显著(P>0.05);北京鸭的活重与屠体重、全净膛重、半净膛重之间,屠体重与全净膛重、半净膛重之间,半净膛重与全净膛重之间呈显著正相关(P<0.05);全净膛重腿肌重之间,半净膛重与腿肌重之间呈显著正相关(P<0.05)。[结论]北京鸭的屠体性能优于天府肉鸭。天府肉鸭的内部器官发育状况更好。

[Objective]The aim was to explore the slaughter performance difference of Beijing duck and Tianfu duck . [Method] Slaughter performance indicators of Beijing duck and Tianfu duck with 43 days were determined ,and the indexes were statistical analyzed . [Result ] The results showed that the live weight, carcass weight, eviscerated weight, eviscerated weight, leg muscle weight, breast muscle weight, breast muscle rate of Beijing duck were significantly higher than Tianfu duck＇s （P 〈 0.05） . The difference of internal organs relative weight indexes of Beijing duck and Tianfu duck were not significant （P〉 0.05） ,except indicator Foot / BW . There was a significant positive correla- tion between live weight and carcass weight, eviscerated weight, eviscerated weight of Beijing duck （P 〈0.05）, and there was a significant positive correlation between carcass weight and eviscerated weight, eviscerated weight of Beijing duck （P 〈0.05）, and there was a significant positive correlation between eviscerated weight and eviscerated weight of Beijing duck （P 〈0.05）. There was a significant positive correlation between all eviscerated weight and leg muscle weight （P 〈0.05） ,and there was a significant positive correlation between half eviscerated weight and leg muscle weight （P 〈0.05） . [Conclusion] Carcass performance of Beijing duck was superior than Tianfu duck . Internal organ development of Tianfu duck was better.
