摘要 安顺金刺梨具有丰富的营养价值和较高的药用价值,尤其是VC含量极高,其果实可加工成果汁、果酱、果酒、糕点等制品。根据中国台湾和东南亚凤梨酥的制作方法,通过正交试验和综合感官评价确定金刺梨酥馅料的最佳配方,结合凤梨酥的制作工艺,研制突出金刺梨果味风味和较高营养价值的金刺梨酥制品,以改变目前市场上产品单一的现状,为安顺金刺梨产业多元化发展增加一条新途径。 The prickly pear of Anshun has the rich nutritional value and high medicinal value,especially the vitamin C content is high,it can be processed into juice,jam,fruit wine,pastry and other products. In this paper,according to the method of making the pineapple cakes Taiwan and southeast Asia,by orthogonal test and comprehensive evaluation method to determine the best formula stuffing of prickly pear pastry, combined with the making craft of pineapple cakes, develop outstanding prickly pear pome taste flavour and high nutrition value of prickly pear pastry products. Change the current situation of the products on the market at present a single,diversified development of anshun gold thorn pear industry increase a new way.
