摘要
燕麦β-葡聚糖是一种功能性多糖,在食品中具有很大的应用潜力。通过对燕麦β-葡聚糖的溶解特性、稳定性以及黏度特性等进行研究,为燕麦β-葡聚糖食品的开发利用提供理论依据。
Oat β-glucan is a kind of functional polysaccharide which has a great potential in food industry. The dissolving properties, stability and viscosity properties of oat β-glucan are studied in this paper, to serve for the development and utilization of oat β -glucan food.
