林蛙油生物活性肽的制备工艺及其抗疲劳研究 被引量:9

摘要 采用响应面法对林蛙油生物活性肽的制备工艺进行了优化,并对活性肽的抗疲劳作用进行了研究。结果表明:超声波辅助酶法制备林蛙油生物活性肽,木瓜蛋白酶的最佳酶解条件为料液比1∶100、酶用量0.3%、温度60℃、时间4 h、p H 5.5,水解度为13.5%。动物试验结果表明:高剂量组小鼠的负重游泳时间是对照组的2.3倍,低剂量组小鼠的转棒时间是对照组的2.73倍,中剂量组小鼠的爬杆时间是对照组的2.8倍;小鼠的血清尿素氮和血乳酸含量分别减小了72.7%和86.5%,说明林蛙油生物活性肽能够缓解疲劳感的产生。 The preparation technology of Oviductus Ranae bioactive peptide (ROBP) with the response surface method was optimized, and its antifatigue effect was studied. The results showed that the optimal hydrolysis condition by ultrasonic-assisted papain method was: substrate concentration 1 : 100, enzyme dosage 0.3%, temperature 60 ℃, hydrolysis time 4 h and pH 5.5, while degree of hydrolysis was 13.5%. Animal models were used to evaluate the antifatigue effect of Oviductus Ranae bioaetive peptide. The results showed that the high dose group was 2.3-fold of the control group in the loaded swimming exercise, the low dose group was 2. 73-fold of the controt group in the rotating-stick exercise, and the middle dose group was 2. 8-fold of the control group in the climbing exercise. ROBP could decrease the content of blood urea nitrogen and lactic acid by 72. 7% and 86.5%, respectively. It proved that ROBP can relieve fatigue.
