摘要 天然食品不能满足人们所需的全部营养且在加工、运输、贮藏过程中常常会出现营养损失等问题,在食品中添加营养强化剂能够补充损失的营养素以提升天然食品的营养价值。本文综述了食品营养强化的概念、意义、国内外发展现状、主要的营养强化食品以及新型营养强化剂的研究进展,从而进一步阐明营养强化剂在食品领域中的重要地位。 Natural food can't meet all the required nutrients and people often appear in the processing, transportation, storage process problems, such as nutrition loss added in the food nutrition fortifier can complement the loss of nutrients to improve the nutritional value of natural food. The concept of food nutrition reinforcement, significance, domestic and foreign development present situation, main fortified foods and the research progress of new type of nutrition enhancer were reviewed, thus the important position in the field of food nutritional fortifiers was further clarified.
